HelloFresh And Stymied!

Let’s start with the positive — we ordered a box from HelloFresh that arrived this past Saturday! We are very excited about all the fresh ingredients, though we will probably not be able to get to all the dishes they are meant to go into.

And here’s why! My physical pain has increased significantly. I can’t stand for more than a few moments without being literally doubled over in pain running up my back or down my leg(s) — it’s both of them now — and causing so many problems for me. I’m mostly bed-bound during the day, only getting up to make something quick to eat or grab a refrigerated salad.

My vitals are still looking okay. My temperature is fine, my SpO2% is in the high 90s every time I check it. My pulse is a little elevated, but I expect that when I’m in this much pain. Same with my blood pressure. My blood sugar is hovering under 200 most of the time (not bad for a diabetic on and off of steroids, to be fair). I’m just in excruciating pain.

So we’re adjusting the expectations. Instead of making panko-crusted chicken with couscous and roasted carrots, we’re making chicken soup in the crockpot with chopped veggies and spices. Instead of caramelized onion Swiss burgers with potato wedges, we’re making spaghetti with meat sauce and mashed potatoes in the Instant Pot. Or baked potatoes in the Instant Pot. We’ll see.

This isn’t meant to be a discouraging post! I’m still on track for what I want out of this year, and it’s only February! I have an appointment to get my CPAP this Thursday, and I’m seeing my primary care doc on Wednesday to discuss the pain and what my options are. Hopefully I can get an MRI of this knee, and some x-rays of my back to start the process there. So progress! Yay! (No sarcasm there, I really am enthusiastic about this.)

I hope to have good news to share with all of you when I get back from the doctor on Wednesday morning. Here’s to hoping! 🙂
